Superbowl Sunday is just around the corner and I know some of us are really looking forward to the big game. I sure am! But if I’m being completely honest, I’m really looking forward to the food…or maybe there’s just something about watching men running around in tights…

I decided to whip up a couple finger food items that I know will be scoffed down real quick. If you’re busy like me, you’ll need something quick but delicious. Below are 2 recipes that you can make for your Superbowl party!

LET’S GET REAADDYYYY TO………..EAT NACHOS!!!!

I’ve searched everywhere for different nacho recipes to get inspired and I’ve combined all of my nacho-chip eating experience into this wonderful delicious creation. You see, nachos can be made in so many different ways, to meat lovers delight, vegetarian, to a sweet and spicy bite! I couldn’t just pick one!

Quick Note

There’s a trick to these perfect cheesy-gooey nachos….I noticed the cheese melted better when I grated the block of cheese myself instead of buying it pre-grated. Maybe I’m crazy? Anyway, just an observation. Feel free to do what is easier for you!

When making the nachos I decided to make sure all the ingredients (especially the cheese) was spread out evenly. That being said, place a layer of chips on your baking sheet, add cheese, then add more chips etc.

Ingredients:
  • Banditos Nacho Chips (or Tortilla chips of your choice)
  • Ground block of cheese grated (or pre-grated mix cheese)
  • Salsa (medium or spicy)
  • Sour Cream (1 cup)
  • Black Olives
  • shallots
  • Ground Beef
  • Black beans (organic canned) (optional)
  • Avocado
  • Fresh cut tomato (cubes)
  • Cilantro (finely chopped)
  • Simply Organic Taco Spice (or meat seasoning of choice)
How to:
  1. Preheat Oven to 350F Degrees
  2. Cook your ground meat and add spices – place aside to cool
  3. Line your baking sheet with parchment paper
  4. Place first layer of your chips on your baking sheet
  5. Add your grated cheese
  6. Add another layer of chips and cheese
  7. Add ground beef and other toppings of choice (ie, black beans etc)*Note: do not add the avocado or cilantro yet… it’ll be hot and mushy…yuck!
  8. Bake for approximately 10 mins or until your cheese has melted!
  9. Sprinkle on pieces of avocado, cilantro, chopped up tomato, shallots etc
  10. Serve Sour Cream, Salsa and Guacamole of choice on the side as your dipping sauces
AINT NOTHING BUT A CHICKEN WANG

I was originally going to use chicken wings for this recipe but seeing how the grocery store ran out I was left with drum sticks. Don’t do what I did and shop on a Friday night right before closing!

If you’re anything like me you’ll get easily overwhelmed with all the copious amounts of spices in the kitchen cabinet. With that said I decided to make things super simple. I decided to marinate the chicken in pre-made spices!

How to:
  • Place chicken with oil and spices in a container or plastic bag to marinate.
  • Marinate 30 to 24 hours
  • Set the oven to 350
  • Place aluminum foil on baking sheet, then add parchment paper (its a much easier clean up 🙂 )
  • Bake for 30 minutes 🙂
  • Optional: Garnish with shallots, cilantro, or parsley of choice!
