Kayla Goes Keto – BLUEBERRY JAM FAM!

I have to say blueberries are one of my favorite fruits. They’re so versatile.

Want jam? Use blueberries.

Want to add some punch of flavor to a muffin? Use blueberries

Want the perfect snack on a warm sunny day? Eat blueberries

Welcome to my super simple blueberry jam recipe!

FRUIT? ON KETO? HAVE YOU GONE MAD? Dontcha worry – I gotchu.

I’ve added a healthy arrangement of fats to keep this jam keto-friendly!

Grocery List:

  • Lemons
  • Blueberries (organic or local farmers market)
  • Chia seeds (Prana)
  • MCT Oil (BulletProof)

  • 12 oz blueberries
  • Juice of ½ -1 lemon (optional)
  • Lemon zest of ½ of lemon
  • Cinnamon
  • 2 TBSP of Swerve or Monk Fruit Sweetner
  • 2 TBSP Chia seeds OR psyllium husk
  • 2 TBSP MCT Oil

How To:

  1. In a pot, on medium – high heat add in lemon juice (optional), blueberries, lemon zest , sweetner and cinnamon.
  2. Once blueberries start disintegrating lower the heat to medium low and let it simmer. Stir every so often to avoid any of it to stick!
  3. Allow the blueberries to form a syrup. Once its reached your desired consistency (I like mine a lil’ chunky) take it off the hot element and allow to sit for 2 minutes.
  4. Add in chia seeds and MCT oil and stir until mixed thoroughly. I use a spatula to stir it / scrape the pot when I add it to the glass container. Place in a glass container, let it cool and place in fridge to solidify into jam-like consistency!!
