Hello everyone, 

Welcome back to the blog! As some of you know I am slowly starting to transition into a low-carb, keto-style way of eating. I believe it’s not only fun but important to try and find recipes to help set yourself up for success on this journey! 

I knew if I was going to make this transition I would have to figure out how to satisfy my sweet and doughy cravings. I couldn’t fathom giving up cookies, pancakes, waffles and one of my ultimate favorites pizza! Or my kryptonite, melted butter or peanut butter on bread…. Which leads me to this post! 

This recipe is so simple anybody can make it – 7 ingredients all mixed in 1 bowl!


I will post pictures of the products I use. I tend to use the same products of bloggers I follow.  I like to make sure everything is spot on, even when it comes down the brand of ingredient. 

Grocery List:

  • Almond Flour (Super fine, I use Bob’s Red Mill or Anthony’s)
  • Aluminum Free Baking Powder (Bob’s Red Mill)
  • Psyllium Husk (Bob’s Red Mill or Anthony’s)
  • Eggs (Organic Large Brown Eggs)
  • Salt (Himalyan)
  • Virgin Coconut Oil (Nutiva)
  • Water (but that’s free, turn on the tap 😉 )

Quantities Metric and US:

  • 200g almond flour  *(1 ½ cup, feel free to add more if it’s too liquidy. Do not exceed 2 cups)
  • 20 g psyllium husk *(¼ cup)
  • 2 tsp baking powder
  • 1 tsp salt
  • 4 eggs
  • 50 g coconut oil (melted) *(2 oz)
  • 125 ml water *(½ cup)

How to:

  • Preheat the oven to 350 F
  • In a large bowl add in your almond flour, baking powder, salt and psyllium husk. Mix thoroughly with fork.
  • Melt your coconut oil in your microwave on HIGH for 30-45 seconds
  • Add in eggs, melted coconut oil and water. Mix with wooden spoon
  • Place a piece of parchment paper in your bread pan or spray with non-stick coconut/ avocado oil spray
  • Bake for 30-32 mins, it will come out golden on top once cooked
  • Top it with my very own blueberry jam.

Quick Note

* Do not use an electric hand mixer
* Your dough will be thick – dont worry!!
