You know what I love about Spring?

I love the fact that it means summer is right around the corner!! Which also means the start of gardening and plenty of colorful flowers.

That’s what gave me this months inspiration to make cupcakes!

Growing up, I loved Easter. Easter egg hunts were a ritual at my aunt’s house with my cousins. We would search the house and backyard, high and low to find the hidden treasures. I remember that sunny spring day, my father and uncle cooking lamb on the spit and all the aromas of my aunts cooking.

However, I have to say my favorite Easter memory was when I was about 5 or 6 years old. I woke up that morning and noticed paper cut-out bunny feet laid out of the floor, that ran down the hallway, down the stairs to the living room where the kind Easter bunny (ahem, Mom and Dad) left me an abundantly-chocolatey-goody basket!

If anyone is wondering – yes I shared my Easter goodies. There was enough in that basket to last me a lifetime!! So to my parents, I take my hat off to you for being so creative and spending a few hours cutting out bunny feet to put a smile on my face!

I decided to make chocolate cupcakes because I mean – what’s Easter without chocolate!? I think it’s crazy if we don’t indulge just a little. If you’re creative and have an extra few minutes, feel free to use a piping bag to make the icing prettier! I had quite a bit of technical difficulties so the piping bag and I aren’t on speaking terms right now…

So here’s a guilt-free, sugar-free, KETO friendly chocolate cupcake recipe! So without further ado here it is!

  • 1 cup almond flour
  • ½ cup unsweetned cacao powder
  • ½ cup swerve (powdered)
  • 1 ½ tsp baking powder
  • 3 eggs
  • ⅔ cup heavy cream (3.5%)
  • 3 ounces of butter
  • 1 tsp vanilla extract
Cream cheese frosting:
  1. 8 oz of cream cheese
  2. Swerve – I just add as much in until I get the taste/sweetness that I like
  3. 1 tsp of vanilla extract
How To:

Use electric mixer and voila!!!
