Very Berry Good Pancakes

Who doesn’t crave a warm and fluffy-bursting-with-flavour pancake on a Sunday morning?

If you’re like me breakfast is my favorite meal of the day. I can have breakfast food any time of the day. Breakfast, lunch or dinner, you name it, I’ll eat it!!

I whipped up a batch of these pancakes for my family last Sunday and they were a total hit! My mom who isn’t even a fan of fruits in her pancakes went in for a second helping, so what does that tell you? 😉

What You’ll Need:

  • 60 g of coconut flour
  • 7 eggs
  • 2 tbsp of vanilla extract
  • ½ tsp of baking powder
  • 1/4 cup unsweetened coconut milk or almond milk ( I use Silk)
  • Coconut oil (35g, melted)
  • Blueberries and raspberries (to your liking)

How to:

  • Whisk together the eggs
  • Add in the coconut flour
  • And melted coconut oil
  • Add in vanilla extract and baking powder
  • Add in as much coconut milk (slowly stir) until you have your desire consistency

In a hot pan or pancake girdle, add butter or oil of choice to grease. Use a ¼ cup and fill it about half way and pour. Plop on blueberries and raspberries, cook about 2-3 mins and flip.

Serve with organic bacon (Le Breton is a staple in my house) and of course maple syrup or sugar-free syrup of choice.
