So it’s Tuesday but its not just any ordinary Tuesday, its….

TACO TUESDAY!

 

I think we should really Taco-bout this easy 3 ingredient coconut tortilla wrap I used! It’s super simple..so simple that all you need is 1 bowl, a whisk and your ingredients!

Low-carb

High in protein

Sturdy and pliable

Rich in fiber

Filling

Ingredients:

  • 60 g coconut flour (roughly ½ cup)
  • 1 container of egg whites (approx 9-10 egg whites)
  • ½ tsp of baking powder
  • Optional: paprika, cumin, turmeric (for flavour and coloring)

How to:

In a medium bowl, mix the coconut flour, egg whites and baking powder and whisk together. You want to whisk until all the clumps from the flour are removed. Your batter should be thin and liquidy. Set is aside while your cast iron skillet or non-stick frying pan heats up. 

Once heated drizzle oil or butter of your choice and then fill ¾ of a ¼ cup and pour batter. 

Mine take about 2-3 minutes to get golden and then I flip them ovahhhh! Once they’re done I place them on a rack so it cools evenly. 

 

Pro Tip:  Once I pour my batter I use a measuring cup to spread it until it makes an even circle. I want to make a tortilla that’s big enough to fit all the stuffing for my tacos! *Sometimes I notice that if spread it to thin I can see the bottom of my skillet. So in that case I just take some more batter and fill in that area.*
